Banana Bread

Ingredients

  • 2 cups all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 3 ripe bananas
  • 1 stick soft butter
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 1 tbsp. Half-n-Half or milk

Directions

  • Step 1. In a medium size bowl, add flour, salt, baking powder, and baking soda. Mix and set aside.
  • Step 2. In another large size bowl add the bananas, butter, sugar, eggs, and vanilla. Mix using hand mixer on high 1-2 minutes.
  • Step 3. If adding Optional nuts or chips, add now and fold into the wet batter with spoon.
  • Step 4. Fold in the flour mixture and mix until smooth batter. Notice batter thickness.
  • Step 5. Add the Half-n-Half or milk stirring until mixed. Notice the batter thins.

    IMPORTANT NOTE:
    The batter should be on the tighter side of pancake batter or on the wetter side of cake batter. Add a tablespoon at a time and make a judgement. Just add H&H/milk until desired consistency is reached.

  • Step 6. Pour the mixture into a buttered and floured 9" x 4" loaf pan. Do not slam pan on table, nut will sink to the bottom of the bread.
  • Step 7. Bake at 325 degrees F for 1 hour 10 minutes or until you can insert a toothpick and it comes out clean.
