Carrot Cake
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 3 cups carrots
- 2 tsp cinnamon
- 1 cup chopped walnuts
- 1/2 cup Half & Half
- 1 cup vegetable oil
- 4 eggs
- 2 tsp vanilla extract
Directions
- Preheat oven to 350 degrees( F). Butter and lightly flour cake pan.
- Step 1.In a bowl, combine flour, sugar, baking powder, baking soda and salt, set aside.
- Step 2.In stand mixer add milk, oil, eggs, and vanilla and mix for 1 minute.
- Step 3. Then add carrots and continue mixing 1 minute.
- Step 4.Then add all dry ingredients including nuts. Mix all ingredients for 2-3 minutes.
- Step 5.Pour mixture into buttered and floured Bundt baking pan.
- Step 6. Bake at 350 deg F for 50-60 minutes, until a toothpick inserted in the center of the cake comes out clean.
Icing Ingredients
- 8 oz package cream cheese
- 16 oz powder sugar
- 1/2 stick butter
Directions
- Step 1.Cream together cream cheese and butter. Add sugar and beat well. Frost cake and sprinkle with chopped walnuts.
- Cool cake completely before frosting.
