Carrot Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 cups carrots
  • 2 tsp cinnamon
  • 1 cup chopped walnuts
  • 1/2 cup Half & Half
  • 1 cup vegetable oil
  • 4 eggs
  • 2 tsp vanilla extract

Directions

  • Preheat oven to 350 degrees( F). Butter and lightly flour cake pan.
  • Step 1.In a bowl, combine flour, sugar, baking powder, baking soda and salt, set aside.
  • Step 2.In stand mixer add milk, oil, eggs, and vanilla and mix for 1 minute.
  • Step 3. Then add carrots and continue mixing 1 minute.
  • Step 4.Then add all dry ingredients including nuts. Mix all ingredients for 2-3 minutes.
  • Step 5.Pour mixture into buttered and floured Bundt baking pan.
  • Step 6. Bake at 350 deg F for 50-60 minutes, until a toothpick inserted in the center of the cake comes out clean.

Icing Ingredients

  • 8 oz package cream cheese
  • 16 oz powder sugar
  • 1/2 stick butter

Directions

  • Step 1.Cream together cream cheese and butter. Add sugar and beat well. Frost cake and sprinkle with chopped walnuts.

  • Cool cake completely before frosting.
